Marquis De Rochambeau


The owner of the restaurant (where I worked in 1997), The Marquis de Rochambeau Restaurant and Cabaret Bar, went by the nickname "Mad Max", was a famous neo-cubist painter, author and International Lawyer, spoke 10 languages, was a noted composer, and hermit, he had $10,000 bottles of wine on the menu, had the Gypsy Kings play there, was listed in Details magazine as one of the top 300 places in America:: It makes me sad to see the place shuttered and empty right next to Ristorante Piccolo. I felt like I lived in the heart of Paris there, among Andre Breton and other surrealists. It was rumored that he took acid while cooking often, which made sense when you saw him in the kitchen with his shirt off looking absolutely insane, pipe hanging out of his mouth.

For de Lafayette, food is an art and a science; a poem and an “abstract painting for the eye”.

De Lafayette's published work, books and encyclopedias occupied the highest place of honor in academia and hospitality industry and currently are used as a criteria/standard for excellence in hotels, casinos, resorts and restaurants operation, management and leadership...
